I teach Culinary Medicine at the University of Ferrara and founded the first Academy in Europe of Culinary Medicine: Cucina Evolution Academy.

Amatriciana amica della pelle e del dimagrimento

Il licopene neutralizza il radicale libero ossigeno singoletto ed è il carotenoide ad azione antiossidante che conferisce il colore rosso, al pomodoro; al fine di renderlo biodisponibile è importante cuocere la passata di pomodoro. Prepariamo insieme un'amatriciana con pochissimi grassi e ricca di licopene, grazie alla prolungata cottura del pomodoro.

Mousse al cioccolato e i benefici sulla pressione

ll cioccolato è un alimento ricchissimo di polifenoli, sostanze bioattive con azione cardio protettiva, abbassa la pressione, contribuisce a ridurre il deposito di colesterolo sulle pareti dei vasi sanguigni ma non dev’essere mai abbinato con la caseina, in quanto la proteina del latte impedisce l’assorbimento intestinale dei polifenoli. Prepariamo insieme una mousse con meno di 10 g di zuccheri e 4 g di grassi, per un totale di 90 kcal.

Vitel Tonnè contro l'anemia

Per chi soffre di anemia, ma non solo, è importante integrare la dieta con ferro biodisponibile per il nostro organismo. Oltre che nella carne, il ferro è contenuto nel pesce e nel latte ma il suo assorbimento intestinale è favorito dall'abbinamento con la vitamina C. Impara come preparare una salsa tonnata, da servire con la carne ma anche con le verdure, ricca di ferro e vitamina C con pochi grassi e calorie.

Ridurre i grassi e i livelli di colesterolo con le arancine siciliane

Ecco come realizzarle per arricchire la dieta di fibre solubili e ridurne drasticamente i grassi, grazie all'inserimento di piselli e alla panatura con cous cous.L’ipercolesterolemia può essere un fattore congenito, oltre che legato alla dieta. Ma anche chi ne soffre in modo congenito può ridurlo fino al 30%, ridurrcendo i grassi saturi, gli zuccheri semplici e con una dieta ricca di fibre solubili, che si trovano anche nei legumi.

Pesto Antiaging: una vera bomba antiossidante

L'abbinamento vitamina E + vitamina C è una vera e propria “bomba antiossidante” per combattere l’invecchiamento cellulare. La Vit C riattiva il potere antiossidante della Vit E, entrambe presenti negli ingredienti tradizionali del pesto, si ossidano a causa dell’aumento della temperatura dovuto all’azione meccanica.

Panna cotta senza zucchero né dolcificanti 

Realizziamo la panna cotta con meno kcal di uno yogurt alla frutta, senza zucchero nè dolcificanti, sfruttando la naturale dolcezza di panna e latte senza lattosio. I prodotti delattosati hanno un potere dolcificante 3 volte maggiore rispetto ai prodotti con lattosio, a parità di quantità di zucchero totale. 

Macco anti colon irritabile

I legumi, se si soffre di colon irritabile, non devono essere eliminati. Ecco come gustare un macco, super goloso e anti infiammazione. Il segreto sta nello sbucciare le fave e frullarle molto finemente.

Dimagrire mangiando di più: il risotto ai funghi
 
Il dimagrimento può sottoporre a  stress psicologico e carenze alimentari. Una soluzione è sfruttare lo sconto sulle calorie dato dalle fibre solubili che rallentano l'assorbimento dei carboidrati (riducendo l'indice glicemico) e in parte riducendo l'assorbimento energetico.

Le vitamine alleate della forma fisica

I legumi sono ricchi di vitamine del gruppo B, che ci aiutano a mantenere la linea perché ci permettono di trasformare il cibo in energia. Tra queste, l’acido folico (vitamina B9) è particolarmente importante per proteggere il nostro DNA, per le donne in età fertile e per la salute del feto. 

Cacio e pepe antiaging

Prepariamo la Cacio e Pepe con un ingrediente segreto: il cavolfiore, in grado di esaltare il sapore del pecorino,  riducendone la quantità impegnata, senza andare a perdere in gusto grazie al sapore e odore intenso dato dagli isotiocianati, molecole dalle importanti proprietà antitumorali.
